I used to be way more organized for dinner, but now that there is only me and my 15 year old son, and it is hard to cook. He is super picky, and would rather eat mac-n-cheese than just about anything else. And while I like to cook, for me it is more fun to cook for others than for myself. ...and I haven't learned to cook for two, as we often had extra mouths at the table. Go big...or go home. By the way, Go Leftovers is not appreciated as said teenager would rather eat mac-n-cheese (or cereal) than leftovers.
Now, I have Facebook Friends that not only do monthly meal planning after scouring the ads, but they also make beautiful meals and post pictures on Facebook. Kick a dog while she is down, friends. Kick a dog when she is down.
So until I have someone to cook for that enjoys it--I will continue to post pictures of my frito boats, bean burritos, and salads on social media. I keep waiting for Rachel Ray to call and offer me a co-hosted show on Food Network, but, until then--my can opener is ready!
